Some of us in the world got an extra hour this week to sleep in, which, in my humble opinion, is the nicest part about the weather turning cold. One. Whole. Hour. All to yourself to stay snuggled in bed, or, perhaps, to get that workout in and then treat yourself to an amazing homemade flatbread breakfast. After all, we’ll get used to it pretty quickly; the extra hour blends into the rest of the day all too soon, so let’s grab that extra hour and turn it into the best part of the morning!
Recently, I bought new fitness shoes, and I have started walking in the mornings just to get my heart rate up, and jumpstart my metabolism. Up until now, I’m ashamed to admit, I used any old gym shoes to exercise with. But about a month ago, I participated in a 5K “fun walk” and the shoes I used didn’t do me any favors; in fact, my feet and knees were sore for days afterwards. I decided to get fit with quality athletic shoes that are made for my post- career-waitress feet, and boy howdy, the difference is amazing. I feel like I’m walking on clouds, with none of the pain afterwards. No excuses now!
When I get home from my walk, I chug a big glass of water with lemon juice, then it’s time to make coffee and get breakfast started. Our new recipe for apple butter flatbread quesadillas has been a favorite with my better half, because of his love of all things apple. It’s sort of like apple pie for breakfast. He also loves the granola crunch apple peanut butter sandwich wraps that he makes with his favorite "limited edition” pumpkin flavored granola, from his stash of the 12 boxes of it he hoards in the pantry. (The store only sells it around Halloween, so yeah, he buys a bunch….)
If I’m feeling like sweet over savory, I love the blueberry hand pie, that we make with frozen blueberries from this summer and a tiny bit of sugar, all baked up in a flatbread crust. A dollop of Greek yogurt seals the deal. Or, if I’ve been really proactive, there will be chia seed pudding in the refrigerator from last night, ready to eat with baked flatbread chips, seriously one of my all time favorite breakfasts these days.
Mostly, though, I crave savory, protein packed breakfasts, and that means: EGGS! I love ‘em. Give me the breakfast diner pizza, the Portland brunch pizza, or the Alta California breakfast wrap, any day. Scrambled eggs? Avocados? I’m all in.
Whatever you do with that extra hour this week, make the most of it. Don’t just run out the door with a granola bar or grab a donut on your way to work. Start your day right with some flatbread and a breakfast that takes a little time to make. It’ll be worth it, I promise. Just like those shoes!
