If you’re like me, you get a lot of email. You might sign up for a lot of sweepstakes- who could, really, resist an all expenses paid trip to culinary Paris? Or a $30,000 kitchen makeover? But then, inevitably, you get put on a List. And another. And another. Until your inbox has thousands of unread messages from every furniture and travel and cooking and bra company IN THE WORLD, and your inbox is flooded with email subjects like “the 109 bucket list destinations you CANNOT miss” and  "247 best meatloaf recipes EVER” and “300 prize winning brownie recipes to wow your in-laws” and "852 mac n’ cheese casseroles using only cauliflower” and every company seems to have the “one bra you’ll never get tired of wearing everyday.” 

 

Well. First off, it’s easy to get overwhelmed when you’re flooded with hundreds of demands, especially when they’re demands from companies merely trying to get you to buy something, right? I mean, who has time some nights to even make one mac n’ cheese casserole using cauliflower, let alone 852? How can 247 meatloaf recipes all hold the title “Best?” Am I the only person who has only a couple, not 100,  bucket list places I want to realistically visit? And don’t even get me started about the bras! Grrrrr.

 

Currently, there are four months of "What to Cook This Weekend" sitting in my inbox, untouched. Do I feel overwhelmed at the thought of hyper-efficient people whipping out every single recipe, as well as a pan of prize winning brownies for their in-laws? Absolutely. Do I sometimes wonder if my meatloaf is, well, good enough? Sure do. No wonder ready-made meal companies are thriving! Because I think the suggestions, the demands, for what to make for dinner are becoming, in my humble opinion, a bit unrealistic. We are being bombarded with so much, it’s easy to just shut down and let someone else take the wheel. 

 

But if I take a deep breath, and I remember that it’s just different businesses vying for my attention, that calms me down a bit. I’m not competing with anyone, after all! And dinner this weekend got a whole lot easier. Instead of 6,000 chicken recipes, I’m going to give you…..six. Whether you have a rotisserie bird in the refrigerator, some ground chicken to thaw out, these recipes are simple, quick, and delicious and have nothing to prove beyond that. 

 

Chicken veggie fajitas made with flatbread make a festive Friday night dinner, and bonus, they’re Weight Watchers® friendly, too! So is this sun dried tomato chicken flatbread wrap, at only 7 SmartPoints®  per serving. 

 

I happen to love chicken pizza, so if you do, too, try the new margherita flatbread with chicken, or the super light and tasty Thai chicken flatbread. Big huge flavor for such little effort, so you’ll have time to go to the garden center later. 

 

Another nice wrap to try is the Mediterranean roasted chicken wrap,  or if you have a bit of time, do yourself a favor and recreate my favorite fast food sandwich, the spicy chicken sandwich on a Foldit. Crispy breaded chicken for the win. Goes great with a light beer on a Saturday afternoon!
