Love is in the air, so here in my house, we are getting ready to stay in and get hygge with it. Our city just wrapped up restaurant week, where our local eateries got a much needed winter boost after the holidays. Naturally, before it began, I made a bunch of reservations at my favorite places, and was super excited for January 27 to roll around. Winter has been rough on us, and we felt like getting out a bit and eating some beautiful food. Besides having someone to cook for me, I love to eat out in order to get inspired by new and unusual flavor combinations and different and delicious cocktails. The next day, when I get home, I usually try to recreate something I really enjoyed the night before; it’s a ton of fun for me! And my better half doesn’t mind a bit either...

 

We were all ready to get our restaurant week on, but then, disaster struck! Our two dogs, one after another, came down with some kind of stomach bug, and between emergency vet bills that blew our discretionary budget, and lost work time, I cancelled all my reservations. Everyone is on the mend now, thankfully, after two weeks, but it’s been a beans and rice sort of menu for us. We’ve probably all been there, at least once, right? 

 

So this year we are keeping it simple and cosy and staying in with something we’ll throw together (not up!) over a glass of wine (or two!) I have to admit that even though I know Valentine’s Day is a made up holiday, I still really love it. Why? Well, I love Love, for starters. And I love hearts. And I love chocolate. There it is, the holy trinity of Valentine’s Day. Guilty as charged. Just don’t buy me a teddy bear and a balloon, that’s a little much. 

 

Whatever we’ll make, we’ll share, because that’s one of the foundations of love. I found some flatbread recipes that are completely and absolutely shareable for you and your loved ones, no matter what you feel like snacking on. Ready? Here goes:

 

You could, for example, grab a couple flatbreads and whip us an impromptu dessert quesadilla  using little bits of fruit, nut butter, and chocolate. Don’t forget the whipped cream! My favorite quesadilla, the apple butter quesadilla, would be perfect with a nip of that bottle of brandy you have in the back of your cupboard, hint, hint. 

 

Everybody loves ice cream, but if you’re celebrating with kids, these petite flatbread ice cream cones are a snap to make and make great Valentine treats. Let the little ones dip their own cones in their favorite toppings. Or try our recipe for banana split grilled dessert nachos, as fun as it gets in the middle of winter! 

 

Sticking to a stricter regimen? You don’t have to suffer. Make this delicious chia seed pudding and baked flatbread chips sprinkled with cinnamon and sugar. Mildly sweet and super tasty as a dessert to nibble on while watching a movie at home. 

So spread your favorite sweet something on your favorite flatbread and spread the love, you hopeless romantics!
