October is here, and already I’m yawning a little more, making more tea in the afternoon, and, as you might have guessed, coming up with tasty things to eat with that afternoon tea. How easy would it be to have cakes, bars, and cookies with that steamy pot of English Breakfast, and thereby piling on the pounds before the holidays even begin? That’s why I snack safely with flatbread. This month is dedicated to all things snack worthy. But even though these flatbread snacks don’t look like spiders or severed digits, in the spirit of Halloween, they’re just as delicious and a tiny bit more sophisticated than your run of the mill treats.
If you need to shake up your breakfast routine a bit, try the new chia pudding with cinnamon and sugar dusted flatbread chips It takes some time to gel up overnight, but you’ll hug yourself in the morning once you taste it. Or warm up that panini grill and make a spicy banana flatbread with a few chocolate chips- chocolate is good for you after all!
For lunch, I made an Italian inspired salami panini that comes together fast and is wonderful next to a green salad or a soup. The same applies to the mini pumpkin quesadillas It’s pumpkin season, and those little pie pumpkins roast up nicely in advance so you can make these spicy little flatbread numbers when the urge strikes.
If chips and dip is your thang, then Snack-tober is the month for you. Try the green goddess dip for a healthy dose of veggies, or the Turkish muhumarra with smoky paprika flatbread chips Both are super easy and extra delicious.
Pizza is snack food, right? Well sort of, if you share with friends or loved ones! Both of October’s flatbread pizzas are savory and totally satisfying: a classic spinach and mushroom pizza or an autumnal squash and sausage pizza using fresh sage from the garden.
No snack repertoire would be complete without dessert. I love the flatbread bark made with toasted walnuts, pomegranate seeds, and deep, dark chocolate Once you make this bark, it disappears, trust me on this. I also took flatbread to the third dimension, rolling it up with with Greek yogurt, pistachios, and chocolate or a frozen dessert/snack that you’ll be happy to have in your freezer. No creepy crawlies, no monsters, just really, really good snacks. I hope you love them.
